    Abstract: 環境中多環芳香烴(Polycyclic Aromatic Hydrocarbon簡稱PAH)。大都來自人為的,碳氫化合物在不完全燃燒及裂解所產生PAH,因具有致癌性,經燒烤後之食物常吸附PAHs。人類暴露於PAHs之威脅大都來自受污染食品,故對食品中PAHs之分析甚受各方重視。本研究的目的,利用高效能液相層析法結合螢光偵檢法來分析食物中多環芳香烴。然而,欲分析高油脂食物中PAHs,首先須將PAHs有效地從食物中萃取到溶液中。故本研究對皂化後萃取法及微波萃取法等作完整的探討,微波萃取法已經應用於萃取飛灰中多氮聯苯及PAHs,與傳統索氏萃取法比較,不僅時間節省許多且所需溶劑量也少,本研究將利用微波萃取食物中PAHs尋找最佳萃取下列條件:萃取溶劑、萃取時間、萃取壓力、萃取方式、萃取溫度等。再以高效能液相層析偵測食物中PAHs之含量。
