    Abstract: 飲食和烹飪文化,在人類的社會和宗教儀式中,扮演著極重要的角色,它也是形成民族特性的決定性關鍵因素。飲食風俗習慣,豐富了人類的文化及心靈。在現今的世界裡,它們是文明的一種基本象徵,並確立了世界的多樣性。飲食文化從19世紀開始,成為學術界研究的課題,是從社會人類學中獨立出來的分支。本研究的主要目的,是俄羅斯和台灣風俗習慣文化之象徵意義;最主要是敘述傳統歲時節慶、年度盛宴、人生大事及其慶祝儀式。筆者運用比較研究方法,來探討飲食文化,希望能替全世界飲食文化中,已既定的型式,注入新的元素。
    如同筆者所指出的,不同文化帶有某種模式,包括象徵符號的分類系統,並且決定食物不同種類的象徵意義。許多關於符號象徵作用的因素:如地理、經濟、社會、時間變遷,當然還有宗教儀式和價值;使用在俄羅斯和台灣文化上的許多分類系統制度,有些食物在特定的社會中,是有優先權的:像是俄羅斯的麵包和台灣的稻米。同樣的,含酒精性和不含酒精性的飲料,上述都有詳細地分析。筆者採用多樣方法,特別是在宗教儀式上的食物和飲料做為研究對象,並且追溯這些相關性的原因。最後,本研究已經能夠預先得出世界上飲食文化普遍模式的結論。

    Food and culinary culture has always been an extremely important part of human rituals, both religious and social. It is also a crucial factor in the formation of ethnic identity. So food and eating customs provide a wealth of information on the culture and mentality of peoples all over the world. And in the modern world they represent a sort of symbolic capital that defines the place of various civilizations in the global space. Culinary culture as well as the diet has become the object of the scholarly study since the 19th century, as a special branch of social anthropology. The main goal of this study is the cultural-symbolic meaning of food in Russian and Taiwanese customs, mostly related to the main annual feasts and the rites of passage. The author has undertaken a comparative method of study of this culinary culture which sheds a new light on the general patterns of culinary culture worldwide.
    As the author shows, different cultures contain certain patterns, or networks of symbolism including classification systems that determine the significance of different categories of food. There are many factors related to this symbolism: the geographical and economic, social, the passage of time and of course religious cults and values. Various systems of classification are used in Russian and Taiwanese cultures. Some kinds of food are privileged in any given culture: such is bread in Russia and rice in Taiwan. Also classification of drinks, alcoholic and non-alcoholic, is analyzed in details. The author undertakes the study of relation of various food substances and drinks to particular rituals and traces the reasons for these links. Finally, the study has made possible to put forward some conclusions on the general patterns of culinary cultures in the world.
